Recipe To The Test
Not quite like Mama's most southern best,
this easy to bake is reciped amongst the finest.
My easy to make cards sitting 'top my cupboard...
One day they called to me
and who should tumble out
but the peach cranberry cobbler recipe
So I mixed, cut and baked till the house smiled
These old walls was a'grinnin' like wild-ness
The rest of the story is history
as I wobbled back and forth, to and fro
In and out the kitchen door
until nary a drop was left in the square pan
Yeah... might not be like Mama's most southern
best, but damn, topped with icecream
it'd sholl put Mama's recipe to the test.

Cranberry Peach Cobbler
Ingredients List:
2 (16-ounce) cans of sliced peaches in light syrup, drained
1 (16-ounce) can of whole berry cranberry sauce
1 package of Duncan Hines Cinnamon Swirl Muffin Mix (or similar)
1/2 cup of chopped pecans
1/3 cup of butter or margarine, melted
Whipped cream or vanilla bean ice cream (optional topping)
Makes 4 - 5 Good size servings...
Directions:- Preheat oven to 350 degrees Farenheit
- Cut peach slices in half lengthwise
- Combine peach slices and cranberry sauce in ungreased pan (the cranberry sauce will gently break)
- Knead swirl packet from mix for 10 seconds (if Duncan Hines Cinnamon Swirl Mix is selected - otherwise skip to step #6)
- Squeeze contents evenly over peach/cranberry mixture
- Combine muffin mix and contents of topping packet (if Duncan Hines... is selected) from mix and pecans in a large bowl.
- Add melted butter & stir until thoroughly blended (the mixture will be crumbly)
- Sprinkle crumbs over the peach/cranberry mixture
- Bake 40 - 45 minutes or until topping is lightly brown and bubbly.
- Serve warm topped with whipped cream or icecream
Results should look something like the pic below, but much better - The picture doesn't do it justice really - and oh - When baking your kitchen (or even entire house depending on its size) will smell like deliciosity

--- ALSO if you wanna make 2 or 3 batches just double/triple the recipe and find a bigger pan - It's even better cause more juices

- may need to add 20 minutes to the cooking time though...
Enjoy!
Jacquii.
