Salmon a Delectible Morsel

Salmon a delectable treat
From the appetizers to the main meal
Here are two dishes to share with your lover
While sitting in front of a fireplace
Feeding one another these dainty elegant morsels
~
Smoked Salmon Quesadillas
~
4 oz Soft fresh goat cheese
1 T Prepared horseradish
2 T Sour cream
2 t Chopped fresh dill
4 Flour tortillas
4 oz Thinly sliced smoked salmon
Additional chopped dill
~
Blend goat cheese, horseradish, sour cream and chopped fresh dill in medium bowl. Season cheese mixture to taste with salt and pepper.
(Cheese mixture can be prepared 1 day ahead. Cover and refrigerate.)
Heat heavy large skillet over medium-high heat. Add 1 tortilla to
skillet and cook until brown spots appear on surface. Turn and heat
other side briefly. Remove and spread 1 tablespoon cheese mixture
over tortilla. Top with 1/4 of smoked salmon and sprinkle with
additional chopped dill. Repeat with remaining tortillas, cheese
mixture, smoked salmon and dill. Cut quesadillas and serve.

Salmon Croquettes
~

3 tablespoons flour
1 cup milk
salt and pepper (to taste)
dash garlic powder
dash onion powder
1 canned or fresh salmon (remove bones) -- drained, flaked
soda cracker crumbs
2 eggs -- slightly beaten
2 tablespoons butter or margarine -- melted

Make a stiff white sauce: Melt butter, add flour, and stir. Add milk
and bring to a boil. Cook until sauce comes away from the sides of the
pan and becomes stiff. Let cool. Add garlic and onion powders and
salmon. Mix well. Chill for 30 minutes. Roll mixture into balls about
the size of walnuts. Dip balls into slightly beaten eggs and then into
soda cracker crumbs, coating well. Deep fry until golden brown

You can say that again - Wow! And especially after having many many beers this evening......into the morning..... Just wow! I want to go shopping for the ingredients right now LOL - the quesadillas sound absolutely marvelous - even with a bit of salsa and fried tortillas on the side ---- I tell you - YOU must be a wonderful chef - you've shared some of the most beautiful recipes I've perchance to glance upon.... And the Salmon/asparagus manicotti.... I was actually thinking of doing some chicken/white sause manicotti rolls for dinner in a few days - It's like............... um.... dang it - can't think....

Oh! It's like fetuccini (sp?) only with mushrooms and sauteed carots with mozzerella, parmesian, ricotta and feta cheese....

"Smoked Salmon Quesadillas"! I adore quesadillas!! Well, I've never bought goat cheese before...but there's a first time for everything. Bear! This is so totally awesome...lots of new stuff to try...of course the won't perfect as when they're made by the master chef...but since you're all the way in Chicago I'll muddle through on my own!
